You can use generic one. I do usually select same TZ, closest to the server, but that does not matter that much really.

A follow-up question for this -- does the timeserver need to be on your own network or the LTSP server itself?  Or could I use a generic timeserver such as any from http://www.pool.ntp.org?

in the lts.conf, you can set the ntp-server address:
TIMESERVER=ntp.example.fr
