Try:
sudo luarocks install luarocks
to upgrade to the latest version of luarocks and then try
sudo luarocks install lunitx --verbose
again. You should get more output before hitting this stage in verbose mode.
This is what I get (before switching to 'build' mode);
$ sudo luarocks install lunitx --verbose
