Apart from the necessity to recompile lualatex.fmt, which I had forgotten, I 
was kind of expecting all that was needed was put the new luatex in the user 
area, say inside ~/Library/texlive/2016/bin (would be ~/.texlive2016/bin on 
Linux I guess), and it would be picked up automatically when running luatex 
from the command line.

In other words, I thought it was possible to install a new binary locally 
without touching the main TeX Live install, and the new binary would take 
precedence, same as .sty files say. (But then again I had forgotten the path 
would need to be set up accordingly.)

In any case, that didn't work, and 
<https://www.tug.org/texlive/custom-bin.html> showed things weren't that 
straightforward, so I went as described.
