Well, I think it's a kind of "topos" in XVI Century song or poetry, and the tradition is still alive if one goes to an open market with greengrocer's stalls, at least in Italy. I dare say the tradition is still alive anywhere, in a more subtle way. I had a choir of teenagers singing it and after I had explained to them that male voices in the song say: "my heart is true" just answering sopranos and of course not believing in what they are saying, they sang and acted perfectly.The sentence is repeated three times and each time with longer note values, which means longer vowels. In my experience, people who lie usually do that. The effect was very nice and everybody enjoyed that. That's a clear sign that everybody knows this kind of double-talking.
