Nowadays, I am in the habit of running git init in any directory in which I edit files and therefore wish to maintain a history. Thereafter, I simply start committing changes. A backup then simply comprises a copy of the directory (with its .git subdirectory included). Obnam is a relatively new backup tool that looks interesting.
