keybindings for arbitrary symbols

Is it possible to bind arbitrary (non-math) symbols to a key, so that
'C-i less' would insert '\guilsinglleft' for example? The 'math-
insert' and 'symbol-insert' functions seem to work only with a small
set of math symbols.
