Hello JMarc,
I found the following system variables (see below). Interestingly the R folders
does not show up on any of the three lines. Also, some of the items (Python39)
have long been gone, apparently with no ill effect. I also did a search for
Rscript.exe (see screenshot below). It shows up in R\R-4.4.x\bin and
R\R-4.4.x\bin\x64. I removed R 4.4.1 to make sure there is no conflict, but it
does not solve my problem. I also looked for R.home in Rstudio and it seems to
point the right way.
So still a mystery, but thank you very much for your continued assistance.

Knitr will be usable is a converter from knitr to LaTeX is found. From
what I see in our code, the test for knitr will require that Rscript.exe
is on your windows PATH (that is, that you can invoke it in a command
window).
Can you check that?
For context, Rscript is, as its name implies, a command that runs R
scripts. It is installed wherever R is.
