Actually, looking at the psnfss documentation, helvet.sty only changes the
sans serif font to helvetica. To make the default font sans serif, you'll
also need to add

\renewcommand{\familydefault}{\sfdefault}

to your preamble.

I would agree that this might not be obvious from the dialog box.
