Emacs is what I use for LaTeX. Others use VIM, joe or any text editor; there are dozens of 'em.

Editors are totally independent of any other application. You can use the same editor for LaTeX, composing e-mail, writing web pages, or programming. It's all text so the editor doesn't matter. How you mark up the text determines how another application will see and process it.
