Hi Sarah, I think the shortcut to jump to the next chapter in an audiobook is Command-Shift-Right Arrow, and it's Command-Shift-Left arrow to move to the previous chapter. This shortcut works whether or not the the track is current playing, as long as it is selected. I also have a "RestartAt" AppleScript that will let you jump to an arbitrary time in an iTunes track.
