Hello Stuart,

ABBYY FineReader Express is your best option for scanning on the Mac. I use it 
with a cheap Canon portable scanner, the Canoscan Lide 110 and the results are 
excellent.

If you need to scan multiple pages, it can be a bit tedious as you have to 
return to the scanner window each time. For scanning something like a book, I 
use VueScan to capture the images, then ABBYY FineReader to perform the OCR. 
VueScan is not available in the Appstore, you have to get it from the 
developer. The Website is:

You can use VueScan without a licence but it leaves a watermark on the image. 
the licence costs $39 for one year, or $79 for life. We've had our VueScan 
licence for over 10 years and still get good support when necessary.

VueScan can also be set to auto-repeat should you prefer this method of working.

I can provide a setup guide for VueScan to anyone who asks me for it.
