I am not sure that many find Prizmo easy to use. I have seen posts on many occasions from people struggling with it. Personally I use EyePal but that is an expensive and increasingly outdated technology so it is probably not appropriate to recommend. A friend uses Abby Finereader to good effect, as have others on this list. I have also heard from others who have achieved good results with Docuscan, but this relies on Cloud processing and is more expensive than Abby. It is designed for VI usage though so should have good ongoing accessibility on any future upgrade path, a fate not necessarily shared with Abby.
All in all I would suggest that Abby and Docuscan probably have the most positive feedback from what I have seen.
