Hello Matthew,

The text that is not in English is placeholder text in a form of Latin. Never 
navigate using Quick Nav in Pages as things will not behave correctly.

You should interact with the document and navigate using the arrow keys. You 
should then find that the placeholder text is highlighted and will disappear as 
soon as you start typing.

The placeholder text provides the correct text attributes for that section of 
your document and these will be retained when you replace it.

If you read the text carefully, you should be able to determine what kind of 
text should replace it. So, you should recognise where your name should go, 
where your address should go, and so on.
