Speaking as an owner of a much upgraded 7500, I've got to agree with MacDuff here - Blue & Whites are unreasonably cheap right now - CPUsed currently has several listed, ranging from $500- $800 Canadian. In the US market, that's going too translate into very inexpensive indeed. Purchasing anything older than a B&W doesn't make much sense - you'll want to do too many upgrades over time and still not equal it. Also, and I'm sure someone will correct me if I'm wrong, I seem to remember noting that the RAM for newer Macs was considerably cheaper than what I was paying.
