All you could possibly achieve is a slightly better optical drive and a bigger hard disk, both of which you can easily add by firewire to the Mac mini with the money you save from not having to buy an iMac :-P
Ok having actually read it granted he does have a point about the hard disk. However it's a budget computer, you can't expect server grade components. Additionally it won't long-term be a good investment as a server as it uses one ATA bus which means 2 hard disks is out of the question if you want an optical drive. As soon as you look at adding more hard disks you are into ATA to Firewire/USB 2.0 adapters, and may as well not have bothered in the first place due to the expense.
If you want a cheap server then an old G4 tower (as Gerard rightly stated) would be a much more useful and expandable option. I mean ultimately you can fit about 8 drives in a G4 tower ;o)
I still stand by the fact it's defiling a work of art, but each to his own i guess... just don't look next time ;o)
