The Firmtek SeriTek SATA cards are very nice in my experience:

They are bootable in a G3 with both OS9 and OSX (10.1.5 upwards according to Firmtek's web site).

Last time I asked them they didn't have a UK distributor but were quite happy to ship direct from the US.
