Hi Tom. Got my Mini when they first came out and love it to bits but don't think it is really suited for what you are trying to do. I would seriously recommend getting a G5 iMac, they are cheap, come with a build in screen, iSight, etc etc
The mini's slower hard drive, and crap graphic cpu just wont hack it. It's the same one Apple stick in their iBook range. And when you take a mini, max the memory, stick a faster hd in and buy a screen you end up with a price tag close to an iMac with 20" screen.
