Take a look at:
http://wiki.services.openoffice.org/wiki/AquaBuild which explains how to build OpenOffice.org Aqua on the Mac. You should only now need Mac OS X and XCode to build.

If you have any problems come back here and ask for some more help.

Once you have managed to build OpenOffice.org come back and ask. You will find a lot of information on the above wiki about OpenOffice.org development.
