It should.  With either setup (either hub or crossover + localtalk) you will
be able to access other computers' volumes in the usual way.  If you are
looking to save files from the iMac to a floppy disk, you'll have to do it
from the machine with the floppy drive (ie: mount the iMac hard drive on the
6300) -- floppy disks cannot be mounted remotely.

Yes.  You can LocalTalk your 6300 and 7100 via LocalTalk or PhoneNet
connectors, or you can use a serial cable (printer cable) as a crossover to
connect them directly.

As long as all machines have file sharing configured correctly and turned
on, you will be able to access any hard drive of any computer on the
network.
