For a complete toolchain, you also need a linker. The gccXY ports rely
on the ld64 provided by Xcode. And you would miss system headers, too.

I would recommend to keep Xcode around. If you leave out the iPhone SDK,
it only takes about 1.5 GiB of disk space.
