When you go to preferences and are in the accounts tab, pressing the new account button will bring up a window with a series of options and information. The second page's first option is set to POP3. It is at the top and the cursor jumps to the second item as the default . You need to go up one to select the pop-up item titled Account type. a ctrl-opt-i will let you find it as well with the item chooser.
