I can't help with Gmail, except to say not to use it anymore. <smile>

As to the inboxes, Mail is combining them as a convenience. You can check both 
at the same time, which I find really helpful. To check only one, simply go to 
the mailboxes table, find the inbox, hit right arrow to expand it, and select 
the account you want to view. Now, all messages will be in that account only.
