For anyone that's interested, it seems Cheryl's method works for the root directories of one's Dropbox folder, but not sub-directories. At least that seems to be how it's working for me. Unchecking sub-directories somehow un-checks the main directories, which results in me needing to re-check them and then re-download them, which is fairly annoying given the extent to which I now rely on Dropbox.
