I have used a stereo track when recording a piano with two mics. Just seems to sound better that way. Of course which mics to use and where to place them is a black art left as fodder for many an audio nerd war. Even if you were doing a vocal and acoustic guitar recording it wouldn't be stereo, it would be two mono tracks, one for guitar and one for vocals, even though you might be using a "stereo" audio interface. Short of large instruments and groups I've put most things on mono tracks for each source so you can then tweak them individually.
