Your mono tracks might render as stereo if you start adding effects like a stereo reverb or the like. The "dry" source would start as a mono track though. Hope it works out for you. Another trick some folks use is a "click" track which is used to keep the beat between the different tracks. So you could, for example, record a guitar first with the click track keeping you on tempo. Then when you go back to add vocals or other parts you keep the same click track so it all meshes together well. Other folks like to lay down some drums first to do the same things. Of course if you record both your vocals and are guitar live at the same time they should be together :)
