All, Good News! I finally got it resolved. I had two users set up on my Mac, and decided to go back to the one I rarely use. That user did not have the problem with the disappearing Extras menu, so I started to compare things between each. A lot of back/forth that I will not bore you with. The problem was in the System Preferences under General, which I rarely look at. But this morning when trying to fix something else, I found the checkbox for “Automatically Hide and Show the Menu Bar”. This was checked, and after unchecking it, the problem was resolved. Thank you all for suffering along with me on this.
