Different people have different scanning software that they use.
Personally, I use DocuScan when I need to scan a document. The one
drawback of DocuScan is that you need internet access in order to use
it. You will be able to get it from the app store. Then you will be
able to pay for the service for a one time $299. There are other
people that use ABBY Fine Reader or Read Iris. The only reason I can
think to use one of those over DocuScan is if you are in a situation
where you don't always have internet access.
