It is not clear whether this is a Mailman 2.1 or Mailman 3 question, but the answer is essentially the same. In MM 2.1 these are the msg_header and msg_footer list attributes and in MM 3 they are the list:member:regular:header and list:member:regular:footer templates. However, neither MM 2.1 nor MM 3 has replacements for the sender of the message.
