Are there any Email or other systems that actually care about this, and will declare me to be an evil, non-compliant server administrator if such addresses do not accept mail?

You asked about systems. I'm not aware of any systems that will care, save for the systems that query things like RFC Ignorant lists which list systems that don't honor the RFC MUST addresses.

You didn't ask about people. I am one of the people that will likely cuss you if I feel the need to send an email to abuse@ or postmaster@ or hostmaster@ one of your domains.

I also use the existence, or lack there of, as a contributing factor if I want to give the sending domain the benefit of the doubt or not.

I support these addresses and I wish that more people did.

Sadly, as more people don't support them, it becomes more likely that people will stop using / supporting them.

Do what you think you need to do. But please think about it at least one more time before you stop supporting these addresses.
