I'd hazard a guess this is due Microsoft only very recently starting to add IPv6 support.
microsoft-com.mail.protection.outlook.com is the first I've seen any IPv6 addresses on any *.mail.protection.outlook.com domains.
Guess this is still in alpha or beta as their delivery support tools (e.g. SNDS) do not yet support IPv6.
