Thanks to Jörg Backschues, I was able to fix the sending side. Long story short: Microsoft "forward" is broken as hell (breaking SPF and other things).
Using a rule instead und using "redirect" instead of "forward" changes the sender so the forward works. Still, that proves once more that microsoft has no clue about mail at all and uses terms they do not know what it is about.
