How about making sqlite/spatialite databases instead. That will only be
simple files but with almost the same interface as Postgis.

Some years ago I built a laptop system demo'ed at several local
schools which worked OK, with mapserver serving OSM via WMS direct
from Postgis. NZ is small enough that the data could be rendered
dynamically from the vector data in a reasonably interactive system.
I can't reasonably use Postgis on a read only filesystem, and all the
later guides assume that tiles will be used. Does anyone have any
advice as to how I might best do this?
