A bit of confusion here.  you say a grid of 10 sq miles   but you mention spacing of 5 miles????

What I was able to do is open a map of WI   select the state and scale it to selection
Map> Scale 
       show entire layer    State
             selection set    Selection

say OK
Measure with the ruler icon the size of the window    I came up with 338  by 331 miles

the square root of 10 is 3.1654205
take 338 * 3.1654205    =   106.7
take 331 * 3.1654205    = 104.5

No go to the tools > geographic utilities> create vector grid
select cover map window with a set number of cells
    I left the X Y degrees alone    and put the 106.7 for the X   and 104.5 for Y   said OK

Now not all the grids are the same size exactly.....   they vary from 10.06 to 10.94 sqmi.  
Depending on how accurate you really need to be .........   this may be a quick way to set it up.

Now if you want a grid of 5 miles by 5 miles    (25 sqmi)    just change the numbers above and do the math.
