I've got a PowerMac 6100/66MHz AV with a 9.1GB SCSI HD, 72MB of RAM, and a
Sonnet G3 upgrade card.
A Linux install may be slower with the upgrade card because Linux may not enable the cache on the upgrade card, if the upgrade is supported at all.

A beige PowerMac _must_ dual boot, the kernel is loaded during the Mac OS boot process via BootX.
The best way I have found to install linux on a NuBus Mac is to put the drive in a beige PCI Mac and install Linux (my preference is YDL).
Get a kernel from http://nubus-pmac.sourceforge.net/ , and install the drive in the NuBus Mac. The "GNU" part of GNU/Linux doesn't care if the machine is NuBus or not. The major trick is to make sure the /dev/sd* is the same between the install machine and the target machine.
Also if your drive is attached to a third-party SCSI card, the SCSI card may not be supported.
You will need to be very patient once you get Linux installed, I couldn't stand to run Linux on a 8100/110, yet I was patient enough to run OS X on a 9600/300.
If you can swing a 7600/200, you would be much better off.
