I contemplated this approach on a variety of occasions, but, ultimately decided against it because of issues with lag between the iPad and the Apple TV, and the question of weather or not the educational value was worth the 'touch screen flare.' Ultimately, it was just as useful -- and no less of an impact -- to use a mac that blended into the installation mirrored on a larger screen through a regular wired connection. I suppose it was comparatively low-tech, but it was a solid approach that required little in the way of maintenance besides an occasional reboot for good measure.
