The planogram is a guideline as to where sections are in a store, and how
each section is subdivided.  If you know the layout of the Best Buy in
Cambridge MA, you have a good idea how the Best Buy in, say, Baltimore MD
is laid out (assuming there is one) because they use the same basic
planogram.

High-bay gondola... I believe this refers to a section of the store that is
raised over the main floor by several inches and segregated by display
cases and such.  This creates a visible and secure area to display small
(read: easilly stealable), expensive merchandise.

Grid is slang for pegboard.
