I vote for your first guess, fuel delivery problem of some kind---bad
filter, crud in the tank, etc.  All my 603 experience says the same
thing about the idle regulation system (properly termed EDS, I
believe)---idle is rougher without it, but I've left it disconnected
by accident and never known the car to stall.
