There are always the firewall shutoff valves actuated by quick-reaction "T" handles to stop all flow - fuel, hyd, oil, etc., to the engine ('cept a bit for lub while windmilling). These are usually located in the strut or wing directly above the engine; 'don't remember any auto or spring-loaded shutoff to stop flow for sheared engine - may be such by now - stuff I dealt with was from 50's, but a lot of it is still flying.
