They make the reinforced plastic lines for sinks and such. One of those should work with the right fittings to adapt each end. I would guess that if you got 25 years out of one, you would be lucky. The copper tube is something that you don't have to worry about. Most home despot type stores also have the SS braid lines. Those should be ok too, but the liner is very thin walled.

Copper or hose, if you get one long enough to make one coil in the center, then someone like you can pull the unit out and not break off the line.

One other option is to buy a length of high pressure hose (3/8) and slide it over a 2-3" stump of copper tube at each end and put hose clamps on it. You don't need the high pressure, but high pressure hose has extra reinforcement and lasts longer than low pressure hose. (400 to 500 PSI is enough) Even hose rated 250 psi would do. Transmission oil cooler hose from McParts should work fine. I think it is rated about 250 and is made for hot operating conditions.

1000psi plastic hose is hard to work with. I would avoid that. Stick with a black rubber hose.

Funny we were talking about broken dishwashers just the other day...

My 25 year old Kitchenaid started making ugly noises and in diagnosing I managed to break the hard water line that feeds the machine. I didn't realize it was a hard line and tried to pull the unit out which you obviously can't do...

Its about a 3/8" soft copper line with flare fittings. I'm wondering if people are using soft lines for this considering its a hot water line. It'd certainly be easier to run a soft line than a hard line plus I don't have a flair tool.
