In general that is the method to do any engine, the 123 is/should be no different. Fuel lines, electrical stuff, vac lines, and water hoses. You'll of course have to disconnect the drive shaft and anything attached to the tranny from the car (shifter!).

Just have a good crane, maybe with one of the levelers, and be able to lift it out high enough. It helps to get the radiator (and whatever else is in front in the way) out so you have more room and don't hole it anyway. Other than that, it is no mystery and no big deal. Don't be intimidated, just be careful wagging several hundred pounds around on the crane.

And have fun!

pretty straight forward

undo various bits

keep track of them with notes, taped labels and perhaps a digital camera

lift the old one out

reverse the procedure

be careful

do not hurt yourself

various folks will argue for days about whether it is better to remove the engine and transmission or to separate them

can be done either way

have to be able to lift higher to take both at once I would think is one of the bigger issues

and finally, if you need to ask, you might well be better off to hire someone who has done it lots of times and will do it quickly and efficiently
