Might want to disconnect the battery before you start on the job.
That way the bag shouldn't go off at least till you reconnect the
battery at worst.
I have an 81 124 that has an electronic speedometer. Just a
rectangular plug on the back with a few wires in it no mechanical
cable anywhere. Maybe they brought them back later?

Should come out with no trouble. Extend the telescoping wheel all
the way out, use the proper hook tools to pull it out. Electronic
speedo/odo on that one, there are several posibilities for
problems.
Do a web search before you rip into it.
The W124, oddly, still has a mechanical speedo.
