I thought I saw on some gardening show where you cut out the bigger branches in the middle of the tree so the outer branches then get more sun and the fruit does better.

DISCLOSURE:  I have never had any apple trees to trim or otherwise thin.

care/spray.  They will tend to have a lot of apples if not thinned.  There
may be enough pollinators around to do the job.  They don't have to be
within sight.  Flowering crabs abound in suburbia, and will do the job.
