I've done that three times. Maybe I just was
lucky but each time the threaded part of the
screw just came out with my fingers turning it.
Use a drill bit just larger then the threaded
part of the screw. Stop when the head falls
off. Take the plate off and unscrew the stub
by hand.
The only hard part in your case is the broken
extractor and getting it out of the hole you
have so you can make it bigger.

Anyway, the striker screws are flat heads, right?
You might be able to drill the screw out, take the striker off, and put vice-grips on the stub of screw remaining.
