Kaleb, 7.1 surround is two in front, two in the rear, two in the middle between front and rear, centre channel and sub. There's also 9.1 (don't ask)
It may be that the PS3 is not sending 5.1 as the default or that the tv is not set to receive 5.1 as default from the optical in. Check the setup in the tv sound menu. There's loads of decent and inexpensive 7.1 receivers out there. How much do you intend to spend?
