One fairly good book, which goes into quite a bit of detail without
assuming too much knowledge at the start, is "Internetworking with
TCP/IP", by Douglas Comer (Prentice-Hall). The copy I have is a bit dated
(1988), but still pretty applicable. The main reason I picked that
particular book is that it was the only one in the bookstore at the time
that actually showed packet formats.
For protocol details, all the RFCs are available online, but they could be
a bit daunting without a grasp of the basics.
