Hi,
 
With 25hp or 18.65kW motor, it should be possible to generate at least 15kW
of power in generator mode. 11kW seem very cautious.

The method described by you is an standard method used to run 3 phase motors
with single phase, the capacitor is used to generate the quasi-3 phase for
motor biasing, therefore if used as a Grid Tied Generator the capacitor will
supply the magnetic field for power generation.

The KW that can be generated by this motor would be the motor rating divided
by 1.73,  so if you have a motor that is 25 HP= 18.65 KW, as a single phase
Grid tied generator, the available power would be 11 KW.
