As Nick and others have already stated, you will gain very little and loose much. Keep in mind that OpenBSD comes with quite few services enabled by default and those that are enabled likely are so for a good reason.

That said, likely because I don't know better, I myself usually disable most stuff in /etc/inetd.conf. Probably I will stop doing that the day I realize I shoot myself in the foot somehow.

However, PLEASE DO NOT take this as advice to disable these services, since I, and probably you neither, know the reasons for having these enabled by default.
