Are you familiar with Topographic maps? The maps that have contour lines every 10 feet? That is a horizontal slice through the mountain at that height. The laser is doing the same. It is cutting the surface it is looking at, the Montgomery hull, and produces a flat plane - the cut section. If that section is your water line, you've nailed it.
