Don't get complicated.

Think of the laser as a knife cutting a section.

You set it up to do the water line.  The laser just "cuts" a section from
the bottom of the boat at that elevation.

It doesn't care if the hull is curved or if it is a strait vertical
surface.

You are asking for a section at X height, and the laser gives it to you.

The water doesn't care what the hull surface curves are  either.  The
hull sits in the water at it's load line.  That's what the laser
describes.
