In my school, we have book clubs in gr 3-5 during the Reading Workshop.
The mini-lesson is targeted to grow the conversation using the
strategy/skill modeled. Guided reading can also occur at this time with
Clubs that are not scheduled to meet that day - the participants will do
the reading they agreed upon at home. Two days a week (T,F) are
scheduled "talk days". The other 3 are reading days with guided reading
groups pulled from the entire class population based on need. In that
case, the student being pulled from the book club must finish the
reading at home. Usually students aren't pulled on "Talk Days" unless
absolutely necessary.

I had professional development today and was informed by the instructor
that book clubs should meet outside of the literacy (guided reading)
block.  I have never heard this before and have always used literature
circles and book clubs within my reading block once my students are
ready for that level of independence.  Does anyone have any background
on this?
